Retail Baking (Bread) Certificate III

This qualification covers the retail baking - bread specialisation within the food processing industry.  Trainees will learn the skills and knowledge for required for working in a retail baking, environment with a focus on bread baking.

Retail Baking (Combined) Certificate III

This course is for people who want to work in the retail baking sector of the food processing industry in cake shops, in-store bakeries and similar outlets.

You will learn to make a range of breads, pastries and cakes using baking equipment and machinery. You will also learn to work safely and effectively, and monitor operational processes in the retail baking sector.

Plant Baking Certificate III

This course is for trainees who want to work in the plant baking sector of the food processing industry in areas such as production or packaging. 

You will learn to work safely and effectively running and/or supervising processes and assisting others in their work in the plant baking sector forming dough with a kneading machine operating machines which roll and mould dough and cut biscuits

(ICF) denotes an Industry Curriculum Framework Course. An optional HSC exam in these courses is available to contribute to the Australian Tertiary Admissions Rank.

The Board of Studies will add units of competency that are listed in the school-based component of a students training plan which are not currently available in the relevant ICF SBA pathway.

To facilitate this schools are asked to complete the Application for inclusion of additional unit(s) of competency to the SBA pathway of an ICF form.
